Fritter Bites
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp kosher salt
- 2 tsp ground cinnamon
- 1/4 cup unsalted butter (melted)
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup unsweetened applesauce
- 1 1/2 cups finely diced apples (Honeycrisp or Gala)
Glaze
- 2 cups powdered sugar
- 1/3 cup + 2 tbsp apple cider or juice
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (204°C) and grease a nonstick baking sheet to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and ground cinnamon to evenly distribute the leavening agent and spices.
- Combine Wet Ingredients: In a large bowl, mix the melted unsalted butter with granulated sugar until blended. Add the egg, vanilla extract, and unsweetened applesauce, then whisk until the mixture is smooth and uniform.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet mixture and gently fold in the finely diced apples, being careful not to overmix to maintain a tender batter.
- Scoop Batter: Using a tablespoon, scoop the batter onto the prepared baking sheet, spacing the fritter bites apart to allow for spreading.
- Bake: Bake the fritter bites in the preheated oven for approximately 10 minutes until they turn golden brown and cooked through.
- Broil for Caramelization: Switch on the broiler and broil the fritter bites for an additional 2-4 minutes to caramelize the tops, watching carefully to prevent burning.
- Prepare Glaze: While the fritters bake, whisk together the powdered sugar and apple cider (or juice) until smooth and of spreadable consistency.
- Apply Glaze: Once the fritter bites are warm, brush the apple cider glaze generously over the tops, allowing them to soak in and add a deliciously sweet finish.
Notes
- Use Honeycrisp or Gala apples for the best flavor and texture in the fritter bites.
- Make sure not to overmix the batter to keep the fritters tender.
- Keep a close eye during broiling to avoid burning the tops.
- The glaze thickness can be adjusted by adding more powdered sugar or apple cider as desired.
- Allow fritter bites to cool slightly before glazing to prevent glaze from melting off completely.
