Instructions

  1. Activate Yeast: In a bowl, whisk together warm milk, active dry yeast, and a pinch of granulated sugar. Let this mixture sit for about 5 minutes or until it becomes foamy, indicating the yeast is active.
  2. Combine Wet Ingredients: Add the mashed ripe bananas, melted unsalted butter, large egg, granulated sugar, and salt to the yeast mixture. Stir well to combine all the wet ingredients evenly.
  3. Mix and Knead Dough: Gradually add the all-purpose flour to the wet mixture, stirring continuously until a smooth dough forms. Knead the dough on a floured surface for approximately 5 minutes until it becomes elastic and smooth. Place the dough in a greased bowl, cover it, and let it rise in a warm spot until doubled in size, about 1 hour.
  4. Prepare Filling and Shape Rolls: Roll the risen dough into a large rectangle. Spread the softened butter evenly over the dough’s surface. Mix the brown sugar and ground cinnamon, then sprinkle this mixture generously on top of the buttered dough. Starting from one edge, roll the dough tightly into a log and cut it into 9 equal rolls.
  5. Second Rise and Bake: Arrange the rolls in a greased baking dish, leaving a little space between each. Cover and let them rise again for 20 minutes. Bake in a preheated oven at 350°F (175°C) for 25 minutes, or until the rolls are golden brown on top.
