- 1 cup pearl barley, rinsed

- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce (optional for depth of flavor)
- 2 bay leaves
- 1 cup diced potatoes (optional)
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Prepare the Beef: Pat the beef chunks dry with paper towels. Season generously with salt and pepper.
- Brown the Beef: In a large pot, heat olive oil and brown the beef in batches. Set aside.
- Sauté Vegetables: In the same pot, sauté onions, carrots, celery, and mushrooms. Add garlic, thyme, oregano, and tomato paste.
- Deglaze the Pot: Pour in beef broth, scraping the browned bits from the bottom.
- Simmer: Return beef to the pot with barley, Worcestershire sauce, soy sauce, bay leaves, and potatoes. Simmer until beef is tender and barley is cooked.
- Adjust Seasoning: Taste and adjust salt and pepper. Thin the soup with more broth if needed.
- Serve: Ladle into bowls, garnish with parsley, and enjoy with bread or crackers.
