Crust and Topping

  • 1 cup salted butter (softened)
  • 1 cup light brown sugar
  • 1 ¼ cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Caramel Layer

  • 1 bag (11 ounces) caramels, unwrapped
  • 3 tablespoons heavy cream
  • 3 tablespoons salted butter

Chocolate Topping

  • 1 ½ cups milk chocolate chips

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan with cooking spray and set it aside.
  2. Make the Dough and Bake Base: In a medium bowl, combine the softened butter, light brown sugar, all-purpose flour, old fashioned oats, baking soda, and salt. Use an electric hand mixer to beat the mixture until all ingredients are well combined. Press three-quarters of this cookie dough evenly into the bottom of the prepared baking pan forming a thin layer. Bake for about 15 minutes or until the base is lightly browned, being careful not to overbake.
  3. Prepare Caramel Sauce: While the base bakes, melt the caramels with 3 tablespoons of salted butter and 3 tablespoons of heavy cream over very low heat in a saucepan. Stir constantly to prevent burning and cook just until the mixture is smooth and melted completely.
  4. Assemble Layered Bars: Pour the melted caramel sauce evenly over the warm baked crust. Sprinkle the milk chocolate chips evenly on top of the caramel layer.
  5. Add Remaining Dough and Final Bake: Crumble the remaining quarter of the cookie dough over the milk chocolate chips and caramel layer. Carefully place the pan back in the oven and bake for an additional 15 minutes.
  6. Cool and Serve: Remove the bars from the oven and allow them to cool completely before cutting into squares. Serve and enjoy your decadent Binge Bars!
