Ingredients
Scale
Cinnamon Rolls and Fruit
- 2 cans (8-count) cinnamon rolls, cut into quarters (icing reserved)
- 1 cup fresh or frozen blueberries
Custard Mixture
- 4 large eggs
- 1/2 cup (120ml) milk
- 1/4 cup (50g) granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Optional Twist
- 1 tsp lemon zest (optional)
- 2 oz cream cheese, cut into cubes (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
- Arrange Cinnamon Rolls and Blueberries: Cut the cinnamon rolls into quarters and spread them evenly in the prepared baking dish. Sprinkle the blueberries evenly on top of the cinnamon roll pieces.
- Prepare Custard Mixture: In a medium bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon until smooth. If using, add lemon zest or cubed cream cheese for a tangy twist.
- Pour Custard Over Rolls: Pour the egg mixture evenly over the cinnamon rolls and blueberries in the baking dish, allowing the liquid to soak into the rolls.
- Bake: Place the casserole in the oven and bake for 35 to 40 minutes, or until the casserole is golden brown on top and the custard is set in the center.
- Finish with Icing: While still warm, gently warm the reserved cinnamon roll icing and drizzle it over the casserole. For extra sweetness, you may add a dusting of powdered sugar or a drizzle of maple syrup if desired.
Notes
- You can use fresh or frozen blueberries; if using frozen, no need to thaw before adding.
- Adding lemon zest or cream cheese adds a nice tang and richness to the casserole but is optional.
- Ensure the custard is fully set before removing from the oven to avoid soggy texture.
- Serve warm for best flavor and texture.
- Leftovers can be covered and refrigerated for up to 2 days; reheat before serving.
