  • Total Time: 45-50 minutes
  • Yield: 8 servings 1x

Description

This Blueberry Cinnamon Roll Casserole is a delightful baked breakfast treat combining soft, fluffy cinnamon rolls with fresh or frozen blueberries, all soaked in a sweet and spiced custard. Perfect for a weekend brunch or holiday morning, it’s topped off with warm cinnamon roll icing for a luscious finish.

Ingredients

Scale

Cinnamon Rolls and Fruit

  • 2 cans (8-count) cinnamon rolls, cut into quarters (icing reserved)
  • 1 cup fresh or frozen blueberries

Custard Mixture

  • 4 large eggs
  • 1/2 cup (120ml) milk
  • 1/4 cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Optional Twist

  • 1 tsp lemon zest (optional)
  • 2 oz cream cheese, cut into cubes (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Arrange Cinnamon Rolls and Blueberries: Cut the cinnamon rolls into quarters and spread them evenly in the prepared baking dish. Sprinkle the blueberries evenly on top of the cinnamon roll pieces.
  3. Prepare Custard Mixture: In a medium bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon until smooth. If using, add lemon zest or cubed cream cheese for a tangy twist.
  4. Pour Custard Over Rolls: Pour the egg mixture evenly over the cinnamon rolls and blueberries in the baking dish, allowing the liquid to soak into the rolls.
  5. Bake: Place the casserole in the oven and bake for 35 to 40 minutes, or until the casserole is golden brown on top and the custard is set in the center.
  6. Finish with Icing: While still warm, gently warm the reserved cinnamon roll icing and drizzle it over the casserole. For extra sweetness, you may add a dusting of powdered sugar or a drizzle of maple syrup if desired.

Notes

  • You can use fresh or frozen blueberries; if using frozen, no need to thaw before adding.
  • Adding lemon zest or cream cheese adds a nice tang and richness to the casserole but is optional.
  • Ensure the custard is fully set before removing from the oven to avoid soggy texture.
  • Serve warm for best flavor and texture.
  • Leftovers can be covered and refrigerated for up to 2 days; reheat before serving.
