Blueberry Sauce:

  • 2⅓ cups frozen blueberries
  • 3 tablespoons maple syrup (or sugar)

Overnight Oats:

  • 2 cups milk
  • 1 cup Greek yogurt (ideally lemon flavored yogurt)
  • 2 cups rolled oats
  • 4 tablespoons chia seeds
  • 4 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • Zest of 1 lemon

Instructions

  1. Blueberry Sauce: Add the blueberries and maple syrup to a saucepan. Cook over medium heat, stirring and mashing until saucy. Cook for 10-20 minutes. Set aside to cool.
  2. Overnight Oats: Combine milk, Greek yogurt, oats, chia seeds, maple syrup, vanilla, salt, and lemon zest. Stir well.
  3. Cover and refrigerate for at least 3 hours or overnight.
  4. Divide blueberry sauce between four jars, top with overnight oats. Add toppings like lemon zest and fresh blueberries.
