Instructions

- Add eggs and vanilla: Beat in eggs and vanilla extract until fully combined and smooth.
- Combine dry and wet ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined to avoid overworking the dough.
- Add oats: Stir in the rolled oats gently until fully incorporated for texture and heartiness.
- Prepare apples and fold in add-ins: Toss the diced apples in a little flour to prevent them from sinking and fold them into the cookie dough along with caramel baking chips.
