  • 1 tablespoon sesame oil

For the Rice:

  • 2 cups jasmine rice
  • 4 cups water

For Garnish:

  • Chopped green onions
  • Fresh cilantro

Instructions

  1. Prep the Chicken: Pat dry the chicken thighs and season with salt and pepper.
  2. Heat the Oil: Heat vegetable oil in a pot over medium-high heat.
  3. Sear the Chicken: Sear chicken thighs skin-side down until golden and crispy.
  4. Make the Sauce: Add soy sauce, brown sugar, ginger, and garlic to the pot with the chicken.
  5. Add Chicken Broth: Pour in chicken broth and bring to a gentle boil.
  6. Simmer: Reduce heat and simmer chicken for 20 minutes.
  7. Cook the Rice: Rinse jasmine rice and cook in water until fluffy.
  8. Prepare the Rice: Combine rinsed rice and water, boil, then simmer until cooked.
  9. Thicken the Broth (Optional): Mix cornstarch with water, add to broth, and cook until thickened.
  10. Garnish and Serve: Slice chicken, serve over rice, ladle broth, and garnish with green onions and cilantro.
