Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C) and line a pizza pan or baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Make Cheese Crust: Evenly spread 2 cups of shredded mozzarella and 1 cup of shredded cheddar cheese onto the prepared pan, shaping it into a large circle approximately 10 to 12 inches in diameter.
  3. Bake: Place the cheese circle in the oven and bake for 8 to 10 minutes, or until the cheese melts fully, becomes bubbly, and turns lightly golden. Remove the crust from the oven carefully.
  4. Add Toppings: Crack the eggs evenly over the cheese crust. Distribute the cooked and crumbled breakfast sausage, diced red onion, and the remaining shredded mozzarella and cheddar cheese over the eggs. Season with salt, black pepper, and red pepper flakes if using, to your taste.
