- 2 boneless, skinless chicken breasts, cut into bite-sized chunks
For the Pasta:
- 12 oz rotini pasta
For the Sauce:
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the rotini until al dente, then drain and set aside.
- Cook the chicken: Season chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook in a skillet until browned, then set aside.
- Make the sauce: In the same skillet, sauté garlic in butter, then add chicken broth and heavy cream. Stir in cheeses until melted.
- Combine & simmer: Add cooked pasta and chicken back to the skillet. Simmer to meld flavors.
- Serve: Garnish with parsley and extra cheese. Serve hot.
