For the Meatloaf:
- 1 pound lean ground beef
- 1/2 cup white onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 cup Italian breadcrumbs
- 1 large egg
- Kosher salt and freshly ground pepper, to taste
For the Topping:
- 3 cups leftover (garlic) mashed potatoes
- 1 1/2 cups sharp cheddar cheese, grated
- 1/3 cup bacon, cooked and crumbled
Instructions
- Preheat oven: Preheat the oven to 400º F.
- Mix the meatloaf: In a large bowl, combine ground beef, onion, garlic, brown sugar, and Worcestershire sauce. Season with salt and pepper, then mix in breadcrumbs and egg.
- Assemble: Press the meat mixture into a baking dish, layer mashed potatoes on top, and sprinkle with cheddar cheese and bacon.
- Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
