  • 1 large egg
  • Kosher salt and freshly ground pepper, to taste

  • 3 cups leftover (garlic) mashed potatoes
  • 1 1/2 cups sharp cheddar cheese, grated
  • 1/3 cup bacon, cooked and crumbled

Instructions

  1. Preheat oven: Preheat the oven to 400º F.
  2. Mix the meatloaf: In a large bowl, combine ground beef, onion, garlic, brown sugar, and Worcestershire sauce. Season with salt and pepper, then mix in breadcrumbs and egg.
  3. Assemble: Press the meat mixture into a baking dish, layer mashed potatoes on top, and sprinkle with cheddar cheese and bacon.
  4. Bake: Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
