Potatoes:
- 4 cups diced, peeled russet potatoes
Smoked Sausage:
- 1 teaspoon olive oil
- 1 (14-ounce) package smoked sausage, sliced
Cheese Sauce:
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups half-and-half or milk
- 1/4 teaspoon garlic powder
- 8 ounces Velveeta cheese, cubed
- 1 cup shredded sharp cheddar cheese
- Salt and pepper, to taste
Instructions
- Prep Baking Dish: Lightly grease a 9-inch square baking dish.
- Cook Potatoes: Boil diced potatoes in salted water until slightly undercooked. Drain and place in baking dish.
- Cook Sausage: Brown sliced sausage in a skillet. Remove and add to the baking dish.
- Prepare Cheese Sauce: Melt butter in a skillet, add flour and cook. Gradually whisk in half-and-half, simmer, then add garlic powder. Add Velveeta and half the cheddar, stirring until melted.
- Assemble Dish: Pour cheese sauce over potatoes and sausage. Top with remaining cheddar.
- Bake: Bake at 350 degrees F for 25-30 minutes.
