Smoked Sausage:

  • 1 (14-ounce) package smoked sausage, sliced

Cheese Sauce:

  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half or milk
  • 1/4 teaspoon garlic powder
  • 8 ounces Velveeta cheese, cubed
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Prep Baking Dish: Lightly grease a 9-inch square baking dish.
  2. Cook Potatoes: Boil diced potatoes in salted water until slightly undercooked. Drain and place in baking dish.
  3. Cook Sausage: Brown sliced sausage in a skillet. Remove and add to the baking dish.
  4. Prepare Cheese Sauce: Melt butter in a skillet, add flour and cook. Gradually whisk in half-and-half, simmer, then add garlic powder. Add Velveeta and half the cheddar, stirring until melted.
  5. Assemble Dish: Pour cheese sauce over potatoes and sausage. Top with remaining cheddar.
