Cookie Dough:

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Make the Cheesecake Filling: In a small bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Scoop out small teaspoons of the filling onto a parchment-lined tray. Freeze the filling drops for 20–30 minutes while you make the cookie dough.
  2. Make the Cookie Dough: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the eggs one at a time, then mix in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until a dough forms. Fold in the chocolate chips.
  3. Assemble the Cookies: Scoop about 1 tablespoon of cookie dough and flatten it in your hand. Place a frozen drop of cheesecake filling in the center. Cover it with another small piece of dough and seal the edges, rolling into a ball. Place on a parchment-lined baking sheet, spaced 2 inches apart.
