Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
Cookie Dough:
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
Instructions
- Make the Cheesecake Filling: In a small bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Scoop out small teaspoons of the filling onto a parchment-lined tray. Freeze the filling drops for 20–30 minutes while you make the cookie dough.
- Make the Cookie Dough: In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy. Add in the eggs one at a time, then mix in the vanilla extract. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until a dough forms. Fold in the chocolate chips.
- Assemble the Cookies: Scoop about 1 tablespoon of cookie dough and flatten it in your hand. Place a frozen drop of cheesecake filling in the center. Cover it with another small piece of dough and seal the edges, rolling into a ball. Place on a parchment-lined baking sheet, spaced 2 inches apart.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Bake for 10–12 minutes, or until the edges are golden and the centers look just set. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Serve & Store: Serve warm or at room temperature. Store in an airtight container in the fridge for up to 5 days.
