Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Swirl Filling

  • ⅓ cup brown sugar, packed
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter, melted

Vanilla Glaze

  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with liners or lightly grease it to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
  3. Combine Wet Ingredients: In a separate bowl, mix the milk, melted unsalted butter, large egg, and vanilla extract until fully blended.
  4. Combine Wet and Dry: Pour the wet mixture into the bowl with dry ingredients. Stir gently until just combined and no streaks of flour remain, taking care not to overmix to keep the muffins tender.
  5. Prepare Cinnamon Filling: In a small bowl, combine the packed brown sugar, ground cinnamon, and melted butter, mixing well to create the cinnamon swirl filling.
  6. Fill Muffin Cups: Spoon about 1 tablespoon of the muffin batter into each muffin cup. Then add a small spoonful of the cinnamon sugar filling on top.
  7. Add More Batter and Swirl: Top each muffin cup with more batter until it is about ¾ full. Use a toothpick or knife to gently swirl the cinnamon filling into the batter creating a marbled effect.
  8. Bake Muffins: Bake in the preheated oven for 15–18 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  9. Prepare Vanilla Glaze: While the muffins cool slightly, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth and pourable.
  10. Glaze and Serve: Drizzle the vanilla glaze over the warm muffins. Serve immediately to enjoy soft, gooey, and delicious cinnamon roll-inspired muffins.

Notes

  • Don’t overmix your batter to keep the muffins tender and fluffy.
  • Add chopped pecans or walnuts to the cinnamon swirl filling for extra crunch and texture.
  • Store leftovers in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Warm muffins in the microwave for 10 seconds before serving to recapture that fresh-from-the-oven softness.
