Streusel Topping:
- 1/2 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, cut into small pieces
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Mix Dry Ingredients: In a large bowl, whisk together the dry ingredients: flour, cinnamon, baking soda, salt, and nutmeg.
- Combine Wet Ingredients: In a separate medium bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract.
- Combine Wet and Dry: Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Add Zucchini and Nuts: Gently fold in the grated zucchini and chopped nuts, if using.
- Pour Batter: Pour the batter into the prepared loaf pan.
- Prepare Streusel Topping: In a small bowl, combine the flour, sugars, and cinnamon. Cut in the cold butter until crumbly.
- Add Streusel Topping: Sprinkle the streusel topping evenly over the batter in the loaf pan.
- Bake: Bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
- Cool and Serve: Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
