Instructions

  1. Preheat & Prepare: Preheat your oven to 175°C (350°F). Line an 8×8-inch (20×20 cm) baking pan with parchment paper and lightly grease it to prevent sticking.
  2. Mix the Wet Ingredients: In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Then add the egg, egg yolk, and vanilla extract, whisking until fully combined for a rich, cohesive mixture.
  3. Add the Dry Ingredients: Stir in the all-purpose flour, baking powder, salt, and ground cinnamon. Mix just until combined to avoid overworking the batter, which will be thick.
  4. Spread & Add Topping: Pour the batter evenly into the prepared pan and smooth the surface with a spatula. Combine 2 tablespoons granulated sugar and 1 teaspoon cinnamon and sprinkle this cinnamon sugar mixture evenly over the batter for a crackly, flavorful crust.
  5. Bake & Cool: Bake the blondies for 20-25 minutes, or until the edges are set and a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let cool completely in the pan before cutting into bars to allow them to set and maintain chewiness.
