Ingredients
Scale
Chicken and Vegetables
- 1 lb chicken breast, cut into bite-sized pieces
- 8 oz mushrooms, sliced
- 1 medium onion, diced
Sauce
- 2 cups chicken broth
- 1 cup sour cream
- 3 tbsp flour
- 1 tsp garlic powder
Seasoning and Oil
- 2 tbsp olive oil
- Salt, to taste
- Pepper, to taste
- Fresh parsley, optional (for garnish)
Instructions
- Cook the chicken: Heat 2 tablespoons of olive oil over medium heat in a large skillet. Season the chicken pieces with salt and pepper, then sauté for 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Sauté mushrooms and onions: In the same skillet, add the diced onion and sliced mushrooms. Cook over medium heat for 5-6 minutes until the mushrooms are browned and the onions become translucent.
- Add flour to thicken: Sprinkle 3 tablespoons of flour over the mushroom and onion mixture. Stir well to combine and cook for 1-2 minutes to eliminate the raw flour taste.
- Create the sauce: Gradually pour in 2 cups of chicken broth while stirring continuously. Cook for 3-4 minutes until the sauce begins to thicken slightly.
- Incorporate sour cream and garlic powder: Reduce the heat to low, then stir in 1 cup of sour cream and 1 teaspoon of garlic powder. Mix thoroughly until the sauce is creamy and smooth.
- Combine chicken and sauce: Return the cooked chicken to the skillet, stirring it into the sauce to coat evenly. Heat through for an additional 2-3 minutes to meld the flavors.
- Serve and garnish: Serve the creamy chicken stroganoff over mashed potatoes or egg noodles, garnished with fresh parsley if desired for a touch of color and freshness.
Notes
- You can substitute sour cream with Greek yogurt for a lighter option, but add it off the heat to prevent curdling.
- For extra flavor, a splash of white wine can be added when cooking the mushrooms and onions.
- Use low-sodium chicken broth to control the salt content.
- This dish pairs well with steamed vegetables or a simple green salad for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
