Ham and Rub

  • ½ cup reserved ham juices

Instructions

  1. Prepare the brown sugar rub: In a medium bowl, combine ½ cup brown sugar and 1 teaspoon ground mustard until well mixed to create the flavorful rub.
  2. Prepare the ham: Unwrap the 6-8 lb bone-in ham and place it in a 6-quart slow cooker. Trim the ham if necessary to fit. Rub the brown sugar and mustard mixture all over the surface of the ham to coat evenly.
  3. Add pineapple juice and cook: Pour 1 cup pineapple juice into the slow cooker around the ham. Cover with the lid and cook on low heat for 4 hours, or until the internal temperature of the ham reaches 140°F (60°C).
  4. Make the pineapple glaze: While the ham cooks, whisk together 1 cup pineapple juice and 1 tablespoon corn starch in a medium saucepan until smooth.
  5. Add reserved ham juices and simmer: Strain the juices from the slow cooker into a container and reserve ½ cup of them. Add the reserved ham juices to the pineapple juice mixture in the saucepan. Heat over medium-high, bringing it to a simmer and cook until the mixture thickens into a glaze.
  6. Adjust sweetness and consistency: Taste the glaze and stir in 1-2 tablespoons brown sugar depending on desired sweetness. If it tastes too salty, add a couple tablespoons of water to balance. To thicken further, stir together additional water and corn starch and add as needed.
