Ingredients
Scale
Ham and Rub
- ½ cup brown sugar
- 1 teaspoon ground mustard
- 1 (6-8 lb) bone-in ham
- 1 cup pineapple juice
Glaze
- 1 cup pineapple juice
- 1 tablespoon corn starch
- ½ cup reserved ham juices
- 2 tablespoons brown sugar (adjust to taste)
Instructions
- Prepare the brown sugar rub: In a medium bowl, combine ½ cup brown sugar and 1 teaspoon ground mustard until well mixed to create the flavorful rub.
- Prepare the ham: Unwrap the 6-8 lb bone-in ham and place it in a 6-quart slow cooker. Trim the ham if necessary to fit. Rub the brown sugar and mustard mixture all over the surface of the ham to coat evenly.
- Add pineapple juice and cook: Pour 1 cup pineapple juice into the slow cooker around the ham. Cover with the lid and cook on low heat for 4 hours, or until the internal temperature of the ham reaches 140°F (60°C).
- Make the pineapple glaze: While the ham cooks, whisk together 1 cup pineapple juice and 1 tablespoon corn starch in a medium saucepan until smooth.
- Add reserved ham juices and simmer: Strain the juices from the slow cooker into a container and reserve ½ cup of them. Add the reserved ham juices to the pineapple juice mixture in the saucepan. Heat over medium-high, bringing it to a simmer and cook until the mixture thickens into a glaze.
- Adjust sweetness and consistency: Taste the glaze and stir in 1-2 tablespoons brown sugar depending on desired sweetness. If it tastes too salty, add a couple tablespoons of water to balance. To thicken further, stir together additional water and corn starch and add as needed.
- Serve: Once the ham has reached 140°F and the glaze is ready, slice the ham and serve with the pineapple brown sugar glaze drizzled over the top.
Notes
- For best flavor, allow ham to rest for 10-15 minutes after cooking before slicing.
- If you prefer a thicker glaze, gradually add more corn starch slurry and simmer until desired consistency is reached.
- You can use fresh pineapple juice or 100% pineapple juice from a carton for the glaze and slow cooker liquid.
- Make sure to monitor the internal temperature of the ham with a meat thermometer to ensure it is fully cooked but not overdone.
- This recipe is perfect for holiday meals and can be paired with roasted vegetables or mashed potatoes.
