Glaze:
- 1 ½ cups powdered sugar
- 2–3 tablespoons milk or lemon juice
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease/flour an 8×8 inch pan.
- Mix Dry Ingredients: Combine flour, baking powder, baking soda, and salt.
- Cream Butter & Sugar: Cream butter and sugar until fluffy.
- Add Wet Ingredients: Beat in eggs, vanilla; mix in yogurt and lemon juice.
- Combine Mixtures: Alternate adding dry and wet mixtures to the creamed butter.
- Fold in Zucchini: Gently fold in zucchini and lemon zest.
- Bake: Pour batter into pan; bake for 30-35 minutes.
- Cool & Glaze: Cool in pan, then drizzle with glaze.
- Set & Serve: Let glaze set before cutting into squares.
