Description
This easy low carb chicken casserole is a hearty and flavorful dish combining tender chicken breast, crispy bacon, fresh broccoli or spinach, and a rich blend of cheeses with ranch dressing. Perfect for a comforting weeknight dinner that’s both satisfying and guilt-free.
Ingredients
Scale
For the Casserole:
- 4 cups diced or shredded cooked chicken breast
- 8 slices cooked and chopped bacon
- 5 cups broccoli florets OR 1 pound thawed frozen spinach (well-drained)
- 3 cloves minced garlic
- 1 cup ranch dressing
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
For the Topping:
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
Optional:
- 1–3 teaspoons ranch seasoning mix (for added flavor)
Instructions
- Prepare Vegetables: Preheat your oven to 375°F (191°C). If using frozen spinach, thaw it completely and squeeze out excess water. If using fresh broccoli, boil it for 1 to 2 minutes until bright green, then drain thoroughly.
- Combine the Main Ingredients: In a large bowl, mix together the cooked chicken, chopped bacon, prepared vegetables, minced garlic, ranch dressing, and half of the shredded mozzarella and cheddar cheeses. Stir well to combine all ingredients evenly. For extra flavor, add 1 to 3 teaspoons of ranch seasoning mix if desired. Alternatively, you may mix everything directly in the casserole dish to minimize washing up.
- Transfer to Casserole Dish: Pour the mixture into a 9×13 inch (23×33 cm) casserole dish, spreading it out evenly.
- Add the Cheese Topping: Sprinkle the remaining shredded mozzarella and cheddar cheeses evenly over the top of the casserole for a deliciously cheesy crust.
- Bake and Serve: Bake the casserole in the preheated oven for about 15 minutes, or until the cheese on top is hot, bubbly, and slightly golden. Remove from oven, allow to cool slightly, then serve warm.
Notes
- You can substitute broccoli with well-drained frozen spinach according to your preference.
- Boiling broccoli briefly ensures it stays bright and tender without becoming mushy.
- Using pre-cooked chicken and bacon saves preparation time.
- For a richer taste, feel free to add ranch seasoning mix to the casserole mix.
- This casserole reheats well and can be stored in the refrigerator for up to 3 days.
