Description

A quick and delicious Egg and Cheese Toasts recipe that combines beaten eggs, grated cheese, and fresh herbs spread over toasted bread, baked until bubbly and golden. Perfect for a tasty breakfast or snack prepared easily in a toaster oven or conventional oven.

Ingredients

Scale

Toast Base

  • 2 slices bread

Egg and Cheese Mixture

  • 1 large egg
  • 1/2 cup (2 ounces) grated cheese (cheddar, pepper jack, or gruyere)
  • 1 teaspoon finely chopped fresh herbs (thyme or rosemary)
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of cayenne pepper (optional)

Instructions

  1. Toast the Bread: Lightly toast the bread slices or broil them for 1 to 2 minutes on each side until just crisp.
  2. Preheat the Oven: Preheat your oven to 400°F (204°C). If using a toaster oven, place the cooking rack in the bottom position and select the BAKE setting.
  3. Prepare the Egg Mixture: Crack the egg into a small bowl and beat it well with a fork until the yolk and white are fully combined. Stir in the grated cheese, finely chopped fresh herbs, salt, and black pepper to taste. Optionally, add a pinch of cayenne for a mild spicy kick.
  4. Assemble the Toasts: Spread the egg and cheese mixture evenly over the toasted bread slices, covering the surface all the way to the crusts.
  5. Bake: Place the prepared toasts onto a baking tray and bake in the preheated oven for 10 to 12 minutes, or until the cheese and egg mixture is puffed, bubbly, and starting to brown.
  6. Serve: Remove from the oven and serve warm for a satisfying breakfast or snack.

Notes

  • You can use any sturdy bread like sourdough or whole wheat for best results.
  • Fresh herbs like thyme or rosemary add flavor, but dried herbs can be used if fresh are unavailable.
  • The cayenne pepper is optional; omit if you prefer a milder taste.
  • Watch carefully when broiling the bread to avoid burning.
  • For a vegetarian option, use cheese without animal rennet.
