These Firecracker Ground Chicken Bowls combine spicy buffalo-inspired sauce with tender ground chicken and crisp broccoli, served over cauliflower rice or steamed rice for a flavorful, low-carb meal that’s quick and easy to prepare.

Firecracker Sauce
- 1/2 cup buffalo sauce
- 2 tbsp coconut aminos
- 3 tbsp coconut sugar
- 2 tsp rice vinegar
- 1 tsp ginger powder
- 2 tsp garlic powder
- Salt and black pepper to taste (omit pepper for AIP)
Main Ingredients
- 2 tbsp avocado oil
- 1 cup broccoli florets
- Salt and pepper to taste
- 1 lb ground chicken
- 2 tbsp green onion (sliced)
- 3 cups cauliflower rice (cooked) or steamed rice
Instructions
- Make the Firecracker Sauce: In a bowl, combine buffalo sauce, coconut aminos, coconut sugar, rice vinegar, ginger powder, garlic powder, salt, and black pepper. Stir well until evenly mixed and adjust seasoning to taste.
- Cook the Broccoli: Heat avocado oil in a large pan over medium heat. Once the oil is shimmering, add broccoli florets and sauté for 5-7 minutes until they become lightly crisp. Season with salt and pepper, then remove from the pan and set aside.
- Cook the Ground Chicken: In the same pan, add the ground chicken. Lightly season with salt and pepper and crumble it as it cooks, stirring occasionally until it is fully cooked and no longer pink.
- Combine Sauce, Chicken, and Broccoli: Pour the prepared firecracker sauce and cooked broccoli back into the pan with the ground chicken. Stir well so the sauce coats the chicken and broccoli evenly. Allow to heat through for a minute or two.
- Serve: Spoon the chicken and broccoli mixture into bowls over cauliflower rice or steamed rice. Garnish with sliced green onions before serving.
Notes
- For an AIP-compliant version, omit black pepper.
- You can substitute cauliflower rice with regular steamed rice according to your preference.
- Adjust the amount of buffalo sauce to control the spiciness to your liking.
- Use fresh ginger powder and garlic powder for the best flavor, or substitute with fresh minced versions if desired.
