  • Author: Ella
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

These French Dip Tortilla Roll Ups are a quick and comforting handheld twist on the classic French dip sandwich. Filled with thinly sliced roast beef and melted mozzarella or provolone cheese, wrapped in warm flour tortillas, and baked to golden perfection, they’re served with a rich, savory au jus for dipping. Perfect for a cozy lunch or easy dinner, this recipe comes together in just about 30 minutes.

Ingredients

Scale

Fillings

  • 1 lb thinly sliced roast beef (deli style or leftover)
  • 1½ cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas

Seasoning & Topping

  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley

Au Jus Sauce

  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking the roll ups.
  2. Assemble Roll Ups: Lay the tortillas flat on a clean surface. Evenly layer the thinly sliced roast beef and shredded mozzarella or provolone cheese down the center of each tortilla.
  3. Roll the Tortillas: Tightly roll each tortilla around the filling and place seam-side down on the prepared baking sheet to keep them closed during baking.
  4. Season and Butter: Brush the tops of the rolled tortillas with melted butter. Sprinkle evenly with garlic powder, onion powder, and dried parsley for extra flavor and a golden finish.
  5. Bake: Place the baking sheet in the oven and bake for 12–15 minutes, or until the tortillas turn golden brown and the cheese inside is thoroughly melted.
  6. Prepare the Au Jus: While the roll ups bake, combine the beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan. Simmer gently over medium heat for 5–7 minutes to develop a rich dipping sauce.
  7. Serve: Remove the roll ups from the oven and slice them if desired. Serve warm with the hot au jus on the side for dipping, enhancing the meaty, cheesy flavors.

Notes

  • Use leftover roast beef or deli-sliced roast beef for convenience.
  • Substitute mozzarella with provolone or a cheese blend for different flavor profiles.
  • For a crispier texture, broil the roll ups for the last 1-2 minutes of baking—watch closely to avoid burning.
  • Leftover au jus can be refrigerated for up to 3 days and reheated gently before serving.
  • These roll ups can be pre-assembled and refrigerated until baking time for easy meal prep.
  • Try adding caramelized onions or sautéed mushrooms inside the roll ups for added depth.
