  • Yield: 24 bites (depending on mold size) 1x
  • Diet: Gluten Free

Description

These Frozen Greek Yogurt Peanut Butter Bites are a delicious and healthy snack combining creamy Greek yogurt, natural peanut butter, and a touch of sweetness. They’re perfect for a quick treat, packed with protein, and easy to make with optional chocolate chips or a chocolate drizzle for extra indulgence.

Ingredients

Scale

Main Ingredients

  • 2 cups Plain Greek yogurt (full-fat or 2% for best texture)
  • 1 cup Natural peanut butter (oil-separated, stirred smooth)
  • 23 tbsp Honey or maple syrup (adjust sweetness to taste)
  • 0.5 tsp Vanilla extract (pure for best flavor)
  • 1 pinch Sea salt (enhances flavor and balances sweetness)

Optional Ingredients

  • 23 tbsp Mini chocolate chips (optional)
  • Melted dark chocolate (for dipping or drizzling)
  • 1 tsp Coconut oil (to smooth melted chocolate)

Instructions

  1. Whisk the base: In a mixing bowl, whisk together Greek yogurt, natural peanut butter, honey or maple syrup, vanilla extract, and sea salt for 30 to 60 seconds until the mixture is glossy and smooth. This ensures even flavor and ideal texture.
  2. Fold in chocolate chips: If using, gently fold mini chocolate chips into the yogurt mixture to distribute them evenly without melting or breaking them up.
  3. Portion into molds: Spoon the mixture into silicone molds or a parchment-lined mini muffin tray using a small cookie scoop for uniform size and easy serving.
  4. Initial freezing: Freeze the molds uncovered for 30 minutes to start firming up the bites, then cover and continue freezing for an additional 2 to 3 hours until fully firm and set.
  5. Add chocolate coating: If desired, melt dark chocolate with coconut oil for smoothness. Dip or drizzle the frozen bites with melted chocolate and return them to the freezer for 10 to 15 minutes to allow the chocolate to set.
  6. Storage: Store the frozen bites in an airtight container lined with parchment paper between layers to prevent sticking. Keep frozen for up to 2 to 3 weeks for best freshness and texture.

Notes

  • Use full-fat or 2% Greek yogurt for creamier texture; non-fat yogurt may result in icy bites.
  • Adjust sweetness by adding more or less honey or maple syrup according to taste preferences.
  • For a vegan alternative, substitute Greek yogurt with a thick plant-based yogurt and use maple syrup instead of honey.
  • The coconut oil in the chocolate helps create a smooth, glossy finish and prevents cracking.
  • These bites are ideal for a quick protein-packed snack or dessert, especially during warmer months.
  • Using silicone molds makes popping the bites out easier and cleanup simpler.
