Zucchini Patties:

Instructions

  1. Grate and Drain Zucchinis: Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes, then squeeze out all the excess moisture using a clean towel.
  2. Mix Ingredients: In a large bowl, combine the zucchini with green onions, parsley, eggs, Parmesan, breadcrumbs, and pepper.
  3. Heat Oil: Heat a little olive oil in a pan over medium heat.
