Brownie Batter

  • 2/3 cup butter

  • 15 Oreos (for stuffing)

Instructions

  2. Melt Butter, Oil, and Sugars: In a microwave-safe bowl, combine the butter, vegetable oil, granulated sugar, and brown sugar. Microwave in 30-second intervals, stirring after each, until fully melted and combined. After melting completely, microwave for another 1 minute and stir vigorously to dissolve the sugars for a smooth, glossy mixture. Using a hand or stand mixer here is recommended for best results.
  3. Add Eggs and Vanilla: Whisk in the eggs one at a time, beating well after each addition until the batter begins to pull away slightly from the sides of the bowl. Then add the vanilla extract and mix thoroughly.
  4. Incorporate Dry Ingredients: Sift together the all-purpose flour, cocoa powder, and salt. Fold these gently into the wet batter just until combined to avoid overmixing, which helps keep the brownies tender.
  5. Layer Batter and Oreos: Pour half of the batter into the prepared baking pan and spread it evenly. Arrange the 15 whole Oreos in a single layer over the batter in the center of the pan.
  6. Top with Remaining Batter: Carefully spoon the remaining brownie batter over the Oreos, spreading evenly to cover them completely.
