Ingredients
Scale
Macaroni
- 1 1/4 cups Elbow Macaroni
Vegetables
- 1 1/2 cups Broccoli, finely chopped
Protein
- 1 cup Ham, cubed
Dairy
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Shredded Mozzarella Cheese
- 1/2 cup Milk
Other Ingredients
- 1 can (10.75 oz) Cream of Mushroom Soup
- 1 Tbsp Dried Minced Onion
- 1/2 tsp Black Pepper
- Crushed Potato Chips (for topping)
Instructions
- Cook the Macaroni: In a pan of boiling water, cook the elbow macaroni until al dente, about 7-8 minutes. Drain well and set aside.
- Combine Ingredients: In a large bowl, mix together the cream of mushroom soup, finely chopped broccoli, cubed ham, shredded cheddar cheese, shredded mozzarella cheese, milk, dried minced onion, and black pepper until well combined.
- Mix Macaroni and Ingredients: Add the drained macaroni to the bowl with the other ingredients and gently stir to evenly distribute everything.
- Prepare for Baking: Grease a 2 1/2 quart baking dish lightly. Pour the macaroni mixture into the dish, spreading it evenly. Sprinkle the crushed potato chips evenly over the top to create a crunchy crust.
- Bake the Casserole: Place the baking dish uncovered in a preheated 350°F (175°C) oven. Bake for 20-30 minutes until the casserole is golden brown on top and bubbly around the edges.
Notes
- For a lower sodium option, use reduced-sodium cream of mushroom soup and low-sodium ham.
- You can substitute the potato chip topping with breadcrumbs or crushed crackers for a different texture.
- Fresh broccoli can be steamed slightly before chopping to reduce baking time, but it’s not necessary.
- This casserole can be prepared ahead of time and refrigerated; increase baking time by 5-10 minutes if starting from cold.
- Leftovers keep well in the refrigerator for up to 3 days and reheat in the oven or microwave.
