  • Yield: 6 servings 1x
  • Diet: Low Salt

Description

A comforting and hearty Ham and Broccoli Casserole combining tender elbow macaroni, savory ham, fresh broccoli, and a creamy mushroom soup base, topped with crunchy crushed potato chips for added texture. This easy one-dish meal is perfect for family dinners and showcases a delicious blend of cheeses and mild seasoning.

Ingredients

Scale

Macaroni

  • 1 1/4 cups Elbow Macaroni

Vegetables

  • 1 1/2 cups Broccoli, finely chopped

Protein

  • 1 cup Ham, cubed

Dairy

  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Shredded Mozzarella Cheese
  • 1/2 cup Milk

Other Ingredients

  • 1 can (10.75 oz) Cream of Mushroom Soup
  • 1 Tbsp Dried Minced Onion
  • 1/2 tsp Black Pepper
  • Crushed Potato Chips (for topping)

Instructions

  1. Cook the Macaroni: In a pan of boiling water, cook the elbow macaroni until al dente, about 7-8 minutes. Drain well and set aside.
  2. Combine Ingredients: In a large bowl, mix together the cream of mushroom soup, finely chopped broccoli, cubed ham, shredded cheddar cheese, shredded mozzarella cheese, milk, dried minced onion, and black pepper until well combined.
  3. Mix Macaroni and Ingredients: Add the drained macaroni to the bowl with the other ingredients and gently stir to evenly distribute everything.
  4. Prepare for Baking: Grease a 2 1/2 quart baking dish lightly. Pour the macaroni mixture into the dish, spreading it evenly. Sprinkle the crushed potato chips evenly over the top to create a crunchy crust.
  5. Bake the Casserole: Place the baking dish uncovered in a preheated 350°F (175°C) oven. Bake for 20-30 minutes until the casserole is golden brown on top and bubbly around the edges.

Notes

  • For a lower sodium option, use reduced-sodium cream of mushroom soup and low-sodium ham.
  • You can substitute the potato chip topping with breadcrumbs or crushed crackers for a different texture.
  • Fresh broccoli can be steamed slightly before chopping to reduce baking time, but it’s not necessary.
  • This casserole can be prepared ahead of time and refrigerated; increase baking time by 5-10 minutes if starting from cold.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat in the oven or microwave.
