Instructions

  1. Prepare the Mango Salsa: Dice the ripe mango and red bell pepper into small cubes. Finely chop the red onion and mince the jalapeño if using. Combine all in a mixing bowl, squeeze fresh lime juice over, stir in fresh cilantro, and season with salt to taste. Mix well and let the salsa sit for at least 10 minutes to allow the flavors to meld.
  2. Prepare the Salmon: Pat the salmon fillets dry with paper towels. Brush them with olive oil, then sprinkle garlic powder, paprika, salt, and black pepper evenly over the fillets. Squeeze lime juice on top for added brightness. Allow the salmon to rest for a few minutes while you prepare the grill.
  3. Grill the Salmon: Preheat your grill to medium-high heat (around 400–450°F). Oil the grill grates well to avoid sticking, using a high-smoke point oil like avocado or vegetable oil. Place the salmon skin-side down on the grill. Cook for 4–5 minutes until the skin is crisp and the fillet starts cooking through. Carefully flip the salmon using a spatula and grill for another 3–4 minutes. Check for an internal temperature of 125–130°F for medium-rare or 135–140°F for well done. Remove from the grill and let rest for a few minutes to lock in juices.
