Ingredients
Scale
Chocolate Mixture
- 2 cups semi-sweet chocolate chips, divided
- 1 1/2 cups milk chocolate chips
- 3 tablespoons butter
- 14 ounces sweetened condensed milk
- 4 packages hot chocolate mix (about 1/2 cup)
- 2 teaspoons vanilla extract
Marshmallows
- 4 cups marshmallows, divided
Garnish
- Peppermint candy canes or crushed peppermints, about 1/2 cup
Instructions
- Prepare Pan: Line an 8×8-inch pan with foil or parchment paper and spray it lightly with cooking spray to prevent sticking.
- Combine Ingredients in Double Boiler: In a double boiler over medium heat, combine 1 1/2 cups semi-sweet chocolate chips, 1 1/2 cups milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir continuously until the mixture is melted and smooth.
- Add Marshmallows: Stir in 2 cups of marshmallows and continue stirring for 1 minute until they begin to melt into the mixture.
- Incorporate Vanilla: Remove the bowl from heat and stir in 2 teaspoons of vanilla extract thoroughly.
- Transfer and Top: Pour the fudge mixture into the prepared pan and evenly press the remaining 2 cups of marshmallows onto the top.
- Chill: Refrigerate the fudge for at least 4 hours to set firmly.
- Cut into Squares: Once chilled and firm, remove the fudge from the pan using the foil or parchment, then cut into 1 to 1.5-inch squares.
- Melt Remaining Chocolate: Microwave the remaining 1/2 cup of semi-sweet chocolate chips in 30-second increments, stirring between each, until completely melted and smooth.
- Drizzle Chocolate and Garnish: Drizzle the melted chocolate over the fudge pieces and sprinkle with crushed peppermint candy canes or peppermints for a festive finish.
- Let Cool Completely: Allow the drizzled chocolate to set and cool completely before serving or storing.
Notes
- Use a double boiler or a heatproof bowl over simmering water to prevent burning the chocolate mixture.
- For easier cutting, warm the knife slightly before slicing the chilled fudge.
- Store fudge in an airtight container in the refrigerator for up to 2 weeks.
- For extra peppermint flavor, add a few drops of peppermint extract along with vanilla.
- You can substitute crushed peppermint candies with white chocolate chips for a different garnish texture.
