Instructions
- Prepare the Zucchini: Grate the zucchini using a box grater and squeeze out excess water for less moisture.
- Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Mix Wet Ingredients: In a large mixing bowl, combine grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until well blended.
- Combine Dry Ingredients: In another bowl, whisk together all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.
- Combine Both Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. A few lumps are okay.
