Zucchini Mixture:

  • 1 tbs Italian seasoning (such as Penzey’s)

Additional Ingredients:

  • 1.5 cups marinara sauce (e.g., Rao’s)
  • 12 ounces mozzarella cheese (8 ounces pre-shredded mozzarella + 4 ounces smoked fresh mozzarella)

Instructions

  1. Preheat oven to 425 degrees.
  2. Add sliced zucchini and onions to a bowl; toss with olive oil, salt, pepper, and Italian seasoning.

  3. Dump zucchini and onions onto a half sheet pan.
  4. Roast for 25 minutes until onions are soft and zucchini is slightly browned.
