Description

Loaded Fiesta Potato Bowls are a delicious, hearty Tex-Mex inspired dinner featuring crispy roasted diced russet potatoes topped with seasoned ground beef or black beans, melted cheese, and zesty toppings like sour cream, salsa, and cilantro. Perfectly seasoned and full of bold flavor, these bowls make a fun and satisfying meal that’s easy to customize with your favorite Tex-Mex ingredients.

Ingredients

Scale

Potatoes

  • 4 medium russet potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • Salt & pepper to taste

Protein

  • 1 lb ground beef or black beans (for vegetarian option)
  • 1 packet taco seasoning (or homemade taco seasoning)

Toppings

  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream or Greek yogurt
  • ½ cup salsa
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Optional: diced tomatoes, corn, jalapeños, olives

Instructions

  1. Preheat and Season Potatoes: Preheat your oven to 425°F (220°C). Toss the diced russet potatoes with olive oil, chili powder, smoked paprika, garlic powder, ground cumin, salt, and pepper to ensure each piece is well coated with the flavorful seasoning mixture.
  2. Roast Potatoes: Spread the seasoned potatoes evenly on a baking sheet. Roast them in the preheated oven for 25–30 minutes, flipping the potatoes halfway through baking to achieve an even, crispy texture on all sides.
  3. Cook Protein: While the potatoes are roasting, heat a skillet over medium heat and brown the ground beef, breaking it apart as it cooks. Once browned, add the taco seasoning packet along with the amount of water recommended on the seasoning package and simmer until the sauce thickens. For a vegetarian version, heat and season black beans similarly.
  4. Assemble Bowls: When the potatoes are done roasting and crispy, transfer them to serving bowls. Sprinkle the shredded cheese over the hot potatoes so it melts slightly.
  5. Add Toppings: Spoon the seasoned ground beef or black beans over the cheesy potatoes. Then layer on your favorite toppings such as diced tomatoes, corn, jalapeños, and olives if using.
  6. Finish and Serve: Top each bowl with dollops of sour cream or Greek yogurt, salsa, sliced green onions, and chopped cilantro for a fresh and tangy finish. Serve immediately and enjoy your vibrant, flavorful fiesta potato bowls.

Notes

  • You can customize protein options by swapping ground beef for ground turkey, chicken, or black beans for a vegetarian version.
  • For a spicier kick, add diced jalapeños or hot sauce to the toppings.
  • Adjust seasoning quantities to taste based on your preferred spice level.
  • To make this dish gluten-free, ensure the taco seasoning you use does not contain gluten.
  • Leftovers store well in the fridge for up to 3 days; reheat in oven or microwave until warmed through.
