Sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)

Pasta

  • 8 oz pasta (penne, rigatoni, or fettuccine)

Garnish

  • Fresh basil leaves

Instructions

  1. Cook the Pasta: Bring a pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain the pasta and set aside.
  2. Season & Sear Chicken: Season the sliced chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken slices and sear them until golden brown on both sides, about 3-4 minutes per side, ensuring they are cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté Garlic & Sun-Dried Tomatoes: In the same skillet, add the minced garlic and sauté until fragrant, roughly 30 seconds. Stir in the chopped sun-dried tomatoes and cook for an additional minute to release their flavors.
  4. Prepare Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Add the freshly grated Parmesan cheese and continue to stir until the cheese melts and the sauce becomes smooth and creamy. Season the sauce with Italian seasoning and optional crushed red pepper flakes for a hint of spice.
  5. Combine Chicken & Pasta: Return the cooked chicken slices to the skillet. Add the drained pasta and toss everything well to coat the chicken and pasta evenly with the creamy sauce.
