Perfect for pre- or post-workout fuel, these no-bake bites come together in minutes and provide a balanced hit of protein with minimal carbs and fat.

Ingredients

Scale

Wet Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 2 tablespoons honey, maple syrup, or sweetener of choice (stevia, monk fruit, or dates)
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 scoop protein powder (optional, chocolate or vanilla)

Mix-Ins

  • 2 tablespoons chopped nuts or seeds (almonds, walnuts, chia, or flax seeds)
  • Handful of mini chocolate chips (optional)

Instructions

  1. Blend Wet Ingredients: In a blender, combine 1 cup of cottage cheese, 2 tablespoons of honey (or your chosen sweetener), and 1 teaspoon of pure vanilla extract. Blend until the mixture is completely smooth with no lumps of cottage cheese remaining.
  2. Add Dry Ingredients: Transfer the blended mixture to a mixing bowl. Stir in 1/2 cup of unsweetened cocoa powder. If using protein powder, whisk in 1 scoop of chocolate or vanilla protein powder until the batter is thick and has a consistency similar to brownie batter.
  3. Incorporate Mix-Ins: Fold in 2 tablespoons of chopped nuts or seeds. For added texture and flavor, sprinkle in a handful of mini chocolate chips if desired.
  4. Form the Bites: Using a tablespoon or a small cookie scoop, portion out the batter. Roll each portion between your hands into a 1-inch ball and place them on a baking sheet lined with parchment paper.
  5. Chill & Set: Refrigerate the protein bites for at least 1 hour to let them firm up. Alternatively, freeze them for 30 minutes if you want to speed up the process.
  6. Enjoy & Store: Once set, enjoy immediately or store the bites in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze for up to 3 weeks.

Notes

  • If the batter is too runny, add more cocoa powder or protein powder to thicken it.
  • For a softer bite, add a splash of almond milk to loosen the mixture.
  • Taste the batter before chilling; adjust sweetness as needed, but add sweeteners gradually.
  • Roll the bites in shredded coconut or crushed nuts for a decorative and flavorful coating.
  • Freeze extra batches in a ziplock bag for grab-and-go convenience and thaw at room temperature for 5–10 minutes before eating.
