Ingredients
Scale
Base
- 1/4 cup unsalted butter
- 1 (10 oz) bag mini marshmallows (about 5 cups)
- 1/2 cup peanut butter
- 6 cups Rice Krispie cereal
Chocolate Topping
- 8 oz chocolate chips (about 1 1/3 cups)
- 2 teaspoons vegetable oil
Instructions
- Prepare the pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent sticking.
- Melt base ingredients: In a large saucepan over low heat, melt the butter, mini marshmallows, and peanut butter together. Stir gently to combine until the mixture is smooth and fully melted.
- Add cereal: Remove the saucepan from the heat and stir in the Rice Krispie cereal until evenly coated with the marshmallow-peanut butter mixture.
- Press mixture into pan: Transfer the mixture into the prepared pan. Use lightly sprayed hands with non-stick cooking spray to press the mixture firmly and evenly into the pan.
- Melt chocolate topping: Place the chocolate chips in a medium-sized heatproof bowl. Microwave in 45-second intervals on medium power, stirring between each interval, until the chocolate is almost fully melted. Then stir until smooth.
- Add oil to chocolate: Stir the vegetable oil into the melted chocolate to give it a glossy finish and smoother texture.
- Apply chocolate layer: Pour the chocolate evenly over the top of the pressed Rice Krispie mixture and spread gently if needed.
- Set and slice: Allow the bars to harden at room temperature for about 2 hours. Once set, cut into squares and store in an airtight container at room temperature.
Notes
- Lightly spraying your hands with non-stick spray helps prevent the sticky mixture from adhering while pressing it into the pan.
- Use medium power when microwaving chocolate to avoid burning it; stir often for even melting.
- You can substitute peanut butter with any nut or seed butter if allergies or preferences require.
- Store treats in an airtight container to maintain freshness and texture.
- For a firmer treat, refrigerate after adding the chocolate layer, but bring back to room temperature before serving for best flavor.
