Description

Delicious and easy-to-make Pizza Pot Pies combine flaky biscuit crusts filled with savory layers of mozzarella cheese, pepperoni, and flavorful pizza sauce, making a perfect snack or party appetizer. These bite-sized treats are baked to golden perfection and seasoned with a buttery Italian-spiced blend for extra taste.

Ingredients

Scale

Seasoning Mixture

  • 14 g (1 tablespoon) butter, softened
  • 7 ml (½ tablespoon) olive oil
  • 1.5 g (¼ teaspoon) salt
  • 0.5 g (¼ teaspoon) garlic powder
  • 0.5 g (¼ teaspoon) Italian seasoning, plus extra for garnish (optional)
  • Pinch black pepper

For the Biscuits

  • Cooking spray or oil for greasing muffin tins
  • 8 refrigerated biscuits (453 g / 16-ounce package)

Filling

  • 60 ml (¼ cup) meatless pasta or pizza sauce
  • 85 g (3 ounces) chopped pepperoni
  • 200 g (78 ounces) shredded mozzarella cheese

Instructions

  1. Prepare Seasoning Mixture: In a small bowl, combine softened butter, olive oil, salt, garlic powder, Italian seasoning, and black pepper. Stir thoroughly until all ingredients are well blended into a smooth seasoning mixture.
  2. Preheat Oven and Prepare Muffin Tins: Preheat your oven to 175°C (350°F). Lightly grease eight muffin cups with cooking spray or a thin layer of oil, then use a paper towel to remove any excess, ensuring no pooling of oil.
  3. Shape Biscuit Crusts: Separate individual biscuits from the package. Press each biscuit gently into a muffin cup, molding it along the bottom and sides to form a secure crust. Use a fork to prick the biscuit base and sides several times to prevent bubbling.
  4. Apply Butter Mixture and Sauce: Brush the inside of each biscuit shell with the prepared butter seasoning mixture evenly. Next, lightly brush about half a teaspoon of meatless pasta or pizza sauce inside each crust for a flavorful base.
  5. Fill with Cheese and Pepperoni: Fill each biscuit cup by layering 1 heaping tablespoon of shredded mozzarella cheese, followed by ½ heaping tablespoon of chopped pepperoni. Repeat this layering once more for a rich, cheesy, pepperoni-packed filling.
  6. Add Final Seasoning: Optionally, sprinkle a pinch of Italian seasoning on top of each filled biscuit shell to enhance the aroma and flavor.
  7. Bake: Place the muffin tins on a baking sheet for stability and bake in the preheated oven for 20 to 23 minutes, or until biscuit edges are golden brown and the cheese inside has melted completely. Begin checking for doneness after 15 minutes and rotate the pan halfway through baking to ensure even cooking.
  8. Serve: After baking, carefully remove the pizza pot pies from the muffin tins using a spatula if necessary. Arrange them on a serving platter and serve warm. These make a perfect snack or appetizer when enjoyed fresh from the oven.

Notes

  • You can substitute pepperoni with other favorite pizza toppings such as cooked sausage, mushrooms, or olives.
  • For a vegetarian version, omit the pepperoni and add more vegetables or plant-based meat alternatives.
  • If refrigerated biscuits are unavailable, homemade biscuit dough can be used as a crust alternative.
  • Keep an eye on the pies towards the end of baking to prevent burning, adjusting time and temperature slightly based on your oven.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave before serving.
