  • 15 oz can pure pumpkin
  • 1 ½ tsp pumpkin spice
  • ½ cup whipped topping, thawed (for folding in)

Topping

  • Remaining 2 cups whipped topping
  • ¼ cup pecans, chopped

Instructions

  1. Make the crust: Mix graham cracker crumbs, granulated sugar, and melted butter in a small bowl. Pour the mixture into a 9×13 inch baking dish and press evenly to form a firm crust layer.
  2. Prepare cheesecake layer: Beat softened cream cheese and powdered sugar on high speed until smooth and combined. On medium speed, beat in 1 ½ cups of whipped topping until blended. Spread this cheesecake mixture evenly over the graham cracker crust. Refrigerate while preparing the next layer.
  3. Prepare pumpkin layer: Beat instant vanilla pudding mix and evaporated milk until thickened. Add pumpkin and pumpkin pie spice and mix well. Fold in ½ cup whipped topping gently to maintain fluffiness. Spread this pumpkin mixture over the cheesecake layer evenly.
