Ingredients
Scale
Protein and Vegetables
- 3 Boneless Skinless Chicken Breasts (diced)
- ½ Yellow Onion (diced)
- 1 Red Bell Pepper (cut into strips)
- 1 Green Bell Pepper (cut into strips)
- 1 Orange Bell Pepper (cut into strips)
Seasoning and Starch
- 1 Packet Fajita Seasoning
- 2 cups Minute Rice
Liquids and Toppings
- 2 cups Chicken Broth
- 8 ounces Tomato Sauce
- Gordos Cheese Dip (to taste)
- 2 tablespoons Olive Oil
Instructions
- Sauté Vegetables: In a large skillet over medium-high heat, add olive oil, diced onions, and all the bell pepper strips. Stir and cook for 2-3 minutes until the vegetables soften slightly but remain crisp.
- Cook Chicken: Add the diced chicken breasts to the skillet, sprinkle the fajita seasoning over the mixture, and cook for 7-8 minutes until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
- Add Rice and Liquids: Once the chicken is cooked through, stir in the minute rice, tomato sauce, and chicken broth. Mix well to combine all ingredients.
- Simmer: Bring the skillet contents to a simmer and let it cook for about 2 minutes. Then turn off the heat, cover, and allow the rice to absorb the broth fully as it rests.
- Serve with Cheese Dip: Spoon Gordos Cheese Dip over the top of the skillet mixture when serving. Enjoy your cheesy chicken fajita skillet hot.
Notes
- You can substitute Minute Rice with any quick-cooking rice, adjusting liquid amounts as necessary.
- For extra spice, add sliced jalapeños or a pinch of cayenne pepper with the fajita seasoning.
- Leftovers can be stored in the refrigerator for up to 3 days.
- To reduce sodium, use low-sodium chicken broth and fajita seasoning.
- Gordos Cheese Dip adds authentic flavor but can be replaced with any creamy cheese sauce of choice.
