Instructions

  1. Sauté Vegetables: In a large skillet over medium-high heat, add olive oil, diced onions, and all the bell pepper strips. Stir and cook for 2-3 minutes until the vegetables soften slightly but remain crisp.
  2. Cook Chicken: Add the diced chicken breasts to the skillet, sprinkle the fajita seasoning over the mixture, and cook for 7-8 minutes until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
  3. Add Rice and Liquids: Once the chicken is cooked through, stir in the minute rice, tomato sauce, and chicken broth. Mix well to combine all ingredients.
  4. Simmer: Bring the skillet contents to a simmer and let it cook for about 2 minutes. Then turn off the heat, cover, and allow the rice to absorb the broth fully as it rests.
