Sweet Potatoes:
- 2 large sweet potatoes, peeled and cubed
Onion Mixture:
- 1 large yellow onion, sliced
- 3 cloves garlic, chopped

- 1–2 teaspoons seasoning of choice
Sausage:
- 16 oz. smoked sausage, pre-cooked and cut into 1-inch slices (such as andouille, kielbasa, etc.)
Instructions
- Preheat Oven: Preheat the oven to 425 degrees F.
- Prepare Vegetables: Toss sweet potatoes, onion, and garlic with olive oil and seasoning on a sheet pan. Roast for 20 minutes, stir, and roast for another 15 minutes.
- Add Sausage: Arrange sliced sausage on the sheet pan among the vegetables. Roast for an additional 10 minutes until sausage is browned.
- Serve: Once done, remove from the oven and serve hot.
