Bacon:

  • 5 slices diced bacon

Beef:

  • 3 pounds boneless beef chuck pieces (cut to 1 inch cubes)

Red Wine Sauce:

  • 1 cup red cooking wine
  • 2 cups chicken broth
  • ½ cup tomato sauce
  • ¼ cup soy sauce
  • ¼ cup flour

Flavorings:

  • 3 minced garlic cloves
  • 2 tablespoons minced thyme
  • Fresh chopped parsley for garnish

Vegetables:

  • 5 medium sliced carrots
  • 1 pound baby potatoes (tri-color)
  • 8 ounces sliced fresh mushrooms

Instructions

  1. Cook Bacon: In a large skillet, cook diced bacon until crisp. Add to the slow cooker.
  2. Brown Beef: Season beef with salt and pepper, brown in the skillet. Transfer to the slow cooker.
  3. Prepare Sauce: Deglaze the skillet with red wine, then add chicken broth, tomato sauce, soy sauce, and flour. Pour into the slow cooker.
  4. Add Ingredients: Add garlic, thyme, carrots, potatoes, and mushrooms to the slow cooker.
  5. Cook: Cook on LOW for 8-10 hours or on HIGH for 6 hours until beef is tender. Garnish with parsley before serving.
