Ingredients

Scale

Main Ingredients

  • 1 Pound Dried Red Beans
  • 1 Link Andouille Sausage, quartered
  • 2 Links Smoked Sausage, sliced
  • 1 Yellow Onion, diced
  • 1 Rib Celery, diced
  • 4 Cloves Garlic, minced
  • 3 Bay Leaves
  • 6 Cups Water
  • 2 Beef Bouillon Cubes
  • 1 Tablespoon Cajun Seasoning

Instructions

  1. Prepare Ingredients: Rinse and sort the dried red beans to remove any debris. Dice the yellow onion and celery, mince the garlic, and quarter the andouille sausage. Slice the smoked sausage into rounds.
  2. Add to Slow Cooker: Place the dried beans, both sausages, diced onion, celery, minced garlic, bay leaves, beef bouillon cubes, Cajun seasoning, and water into a 5-quart or larger slow cooker. Stir well to combine.
  3. Cook: Cover the slow cooker with its lid and cook on high heat for 6 hours. The beans should become tender and the flavors meld together beautifully during this time.
  4. Mash for Creaminess: Depending on your preference for texture, mash some of the beans against the side of the slow cooker pot to release starch and create a creamier consistency.
  5. Serve: Serve the Cajun red beans hot over cooked white rice to complete this traditional Louisiana dish.

Notes

  • Soaking the beans overnight can reduce cooking time and improve digestibility, but it is optional.
  • Adjust the amount of Cajun seasoning according to your preferred spice level.
  • For a vegetarian version, omit the sausages and use vegetable bouillon cubes instead.
  • Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
