Instructions

  1. Cook the Pasta: Boil the penne rigate pasta according to package instructions. Reserve one cup of the pasta water.
  2. Saute Spinach and Ricotta: In a skillet over medium heat, melt butter, then add garlic and spinach. Cook until fragrant. Stir in ricotta and cook briefly.
  3. Combine Ingredients: Add the cooked pasta and some reserved pasta water. Cook until well combined. Adjust consistency with more pasta water, if needed.
