Pasta and Sauce

  • 8 oz shell pasta
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Reserved pasta water (as needed)
  • 2 tbsp fresh parsley, chopped (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the shell pasta and cook until al dente according to package instructions. Reserve ½ cup of the pasta water, then drain the pasta and set aside.
  2. Season Steak: Pat the steak bites dry with paper towels and season generously on all sides with salt and black pepper to enhance flavor and ensure a good sear.
  3. Sear Steak Bites: Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer, cooking for 2-3 minutes on each side until browned and cooked to your preferred doneness. Once done, transfer the steak bites to a plate and cover loosely with foil to keep warm.
  4. Sauté Garlic: Reduce the skillet heat to medium. Add the unsalted butter and minced garlic to the skillet, sautéing for about 1 minute until the garlic becomes fragrant but not browned.
  5. Make Alfredo Sauce: Stir in the heavy cream and bring the mixture to a gentle simmer. Gradually whisk in the grated Parmesan cheese, stirring continuously until melted and the sauce is smooth. Season with salt and black pepper to taste.
  6. Toss Pasta in Sauce: Add the cooked shell pasta to the Alfredo sauce and toss gently to coat all the pieces thoroughly. If the sauce is too thick, stir in some reserved pasta water a little at a time until you reach the desired consistency.
