Ingredients

Scale

Sandwich Ingredients

  • 1 package of 12 King’s Hawaiian rolls
  • 1 pound ground pork breakfast sausage
  • 16 slices American cheese (from an 8 oz. package; Boar’s Head suggested)
  • 6 large eggs
  • 6 slices thick bacon, cooked and chopped
  • Salt and pepper, as desired
  • 4 tablespoons melted unsalted butter
  • Everything bagel seasoning
  • Finely chopped chives, if desired, for serving

Sriracha Mayo Sauce

  • 1/2 cup mayo
  • 12 tablespoons sriracha or your favorite hot sauce
  • 1 teaspoon Worcestershire sauce
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a sheet pan with parchment paper. Set aside for later use.
  2. Cook Sausage and Eggs: In a medium skillet over medium heat, cook the ground pork sausage until fully cooked and no longer pink. Transfer to a paper towel-lined plate to drain excess grease. Using the same skillet, scramble the 6 eggs, seasoning with salt and pepper to taste. Set the scrambled eggs aside.
  3. Prepare the Rolls Layers: Keeping the rolls connected, carefully slice them horizontally with a serrated knife. Place the bottom half on the lined sheet pan. Lay 8 slices of American cheese evenly on the bottom rolls. Add the cooked sausage evenly over the cheese, then layer on the chopped bacon. Spread the scrambled eggs evenly on top of the bacon, and finish by layering the remaining 8 slices of cheese over the eggs.
  4. Assemble and Season: Carefully place the top half of the rolls over the layered ingredients. Brush the tops generously with melted unsalted butter. Sprinkle everything bagel seasoning evenly over the buttered tops. Cover the entire assembly with aluminum foil.
  5. Bake the Sliders: Bake covered in the preheated oven for 15-20 minutes. Remove the foil and continue baking for another 5-10 minutes until the tops are golden brown, cheese is melted, and sliders are heated through. Optionally, garnish with finely chopped chives.
  6. Prepare Sriracha Mayo: While baking, whisk together the mayo, sriracha, Worcestershire sauce, and a pinch of salt in a small bowl until smooth and well combined.
  7. Serve: Slice the baked sliders into individual servings. Serve hot alongside the prepared sriracha mayo dipping sauce for a flavorful finish.

Notes

  • You can adjust the amount of sriracha in the mayo to make it as mild or spicy as you prefer.
  • Using King’s Hawaiian rolls adds a subtle sweetness that pairs wonderfully with savory ingredients.
  • Make sure to drain the cooked sausage well to avoid soggy rolls.
  • Bacon can be swapped with sausage patties or ham slices depending on preference.
  • To make this recipe quicker, precooked bacon and pre-scrambled eggs can be used, though fresh gives best flavor.
  • Everything bagel seasoning enhances flavor but can be omitted if unavailable.
  • If desired, add sliced tomatoes or avocado for extra freshness.
