This Watermelon and Goat Cheese Appetizer is a refreshing and elegant dish perfect for summer gatherings. Juicy seedless watermelon rounds filled with creamy goat cheese, garnished with fresh cucumber, and a squeeze of lime juice.

Watermelon Rounds:

  • 1 mini seedless watermelon (Dulcinea preferably)

Goat Cheese Filling:

  • 68 ounces goat cheese
  • 2 tablespoons milk (or more to make creamy)

Garnish:

  • 1 Persian cucumber
  • 23 limes

Instructions

  1. Prepare Watermelon Rounds: Wash watermelons well. Cut a thin slice off one side to give you a flat surface. Roll melon to flat side and cut 1″ wide pieces of watermelon. Using a cookie cutter, cut pieces of melon.
  2. Fill with Goat Cheese: Use a melon baller to cut little half rounds out of the center of the watermelon pieces. Whip goat cheese and milk until creamy. Pipe the cheese mixture into the indentations.
  3. Garnish and Serve: Garnish with cucumber slices. Place on a plate, squeeze lime juice over the top, and serve.
