Ingredients
Scale
Soup Base
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
Soup Ingredients
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, rinsed
- 1 cup small pasta (like ditalini)
- 2 cups kale, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened and fragrant, about 5-7 minutes.
- Add Remaining Ingredients: Stir in the diced tomatoes (including liquid), vegetable broth, rinsed cannellini beans, small pasta, chopped kale, Italian seasoning, salt, and pepper. Mix well to combine all ingredients evenly.
- Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, or until the pasta is tender and the flavors meld together. Adjust seasoning if needed before serving.
Notes
- Ensure to rinse canned beans to reduce sodium content and improve flavor.
- You can substitute kale with spinach or Swiss chard if preferred.
- Use vegetable broth for a vegetarian and vegan option.
- For a gluten-free version, substitute the pasta with gluten-free pasta or omit it entirely.
- Adding a pinch of red pepper flakes can add a nice subtle heat to the soup.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 1 month.
