Ingredients
Zucchini and Squash Fritters:
- 1 medium zucchini, shredded
- 2 small yellow squash, shredded (or 1 large yellow squash)
- 1 small sweet onion, minced
- 1/2 cup grated parmesan or romano cheese
- 1 egg
- 1 tbsp chopped fresh parsley
- 1 1/4 tsp salt
- 1 tsp ground black pepper
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 2 tbsp canola oil or other frying oil
Instructions
- Step 1: Prepare and Drain the Squash and Zucchini
Remove any seeds from the shredded zucchini and yellow squash. Coarsely grate both vegetables, sprinkle with salt, and allow to sit to draw out excess moisture.
- Step 2: Mix Vegetables with Aromatics and Cheese
Add onion, cheese, parsley, egg, salt, and pepper to the drained vegetables. Mix well.
- Step 3: Combine with Flour and Baking Powder
Whisk flour and baking powder, then mix with the vegetable mixture until combined.
- Step 4: Fry the Fritters
Heat oil, drop batter in small handfuls, flatten, fry until golden on both sides.
- Step 5: Serve the Fritters
Serve warm fritters with sour cream for dipping.
