Zucchini Bread:

  • 2 cups Grated Zucchini (about 2 zucchini)
  • 3/4 cup Oil (such as canola)
  • 3/4 cup Brown Sugar
  • 1/2 cup Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla
  • 2 cups Flour
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg

Instructions

  1. Preheat oven to 350 degrees: Wash the zucchini well and grate it. Press down firmly to measure accurately. No need to drain, add to a bowl.
  2. Add oil, sugars, eggs, and vanilla: Mix well.
  3. Fold in dry ingredients: Combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Pour into a greased bread pan.
  4. Bake: Bake for 40-45 minutes, tent with foil, sprinkle sugar on top if desired, and bake for another 10 minutes. Check for doneness.
  5. Cool and serve: Let the bread cool, then enjoy with sweet cream butter.
