Cake:

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1/4 teaspoon ground cloves
  • 2 cups finely shredded zucchini (do not squeeze liquid out)
  • 1 1/2 cups light brown sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract

Cream Cheese Frosting:

  • 8 ounces block-style cream cheese (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 1/2 cups confectioner’s sugar

Instructions

  1. Zucchini spice cake – Preheat oven to 350℉ and lightly grease a 9×13 baking pan. Set aside.
  2. In a bowl, add dry ingredients: flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Whisk to remove clumps and set aside.
  3. In a separate bowl, add wet ingredients: shredded zucchini, brown sugar, oil, eggs, and vanilla extract. Stir until incorporated.
  4. Add dry ingredients to wet ingredients and stir until just incorporated (do not overmix).
  5. Pour cake batter into prepared 9×13 baking pan and bake for about 28 to 34 minutes, or until the center pops back when gently pressed. Alternatively, use an instant-read thermometer to check for 210F in the center.
  6. Allow cake to cool completely before frosting or slicing.
  7. Cream cheese frosting – In a large bowl, beat cream cheese and butter until creamy. Add vanilla, salt, and confectioner’s sugar, and mix until combined. Whip at high speed for 2-3 minutes until light and fluffy.
  8. Spread frosting onto cooled cake and top with chopped walnuts or pecans if desired.
