  • Total Time: 5 hours 20 minutes
  • Yield: 12 servings 1x

Description

This Caramel Swirl Cheesecake features a creamy, smooth cream cheese filling with decadent caramel swirls baked atop a buttery graham cracker crust. Soft, rich, and sweet, it’s a perfect dessert for any occasion that combines the classic cheesecake flavor with a luscious caramel twist.

Ingredients

Scale

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted

Filling

  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup caramel sauce (thick, pourable)

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan or line it with parchment paper to prevent sticking.
  2. Make the Crust: In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted unsalted butter. Press this mixture firmly and evenly into the bottom of the prepared springform pan to form the crust.
  3. Chill Crust: Place the crust in the refrigerator to chill for 10 minutes so it firms up and holds together well during filling.
  4. Prepare Cheesecake Filling: In a large mixing bowl, beat softened cream cheese until smooth and fluffy. Gradually add 1 cup sugar and vanilla extract, mixing well until combined.
  5. Add Eggs: Add the eggs one at a time, beating on low speed after each addition just until incorporated, to avoid overmixing and adding air.
  6. Assemble Cheesecake: Pour half of the cream cheese mixture over the chilled crust. Drizzle half of the caramel sauce across the batter in lines. Carefully top with the remaining cream cheese mixture.
  7. Swirl Caramel: Using a knife, gently swirl the caramel into the cheesecake batter with figure-eight motions to create a marbled effect.
  8. Bake: Bake in the preheated oven for 55–60 minutes, until the edges are slightly golden and the center is just set but still slightly jiggly.
  9. Cool and Refrigerate: Allow the cheesecake to cool to room temperature on a wire rack. Then refrigerate for at least 4 hours or overnight to fully set and develop flavor before serving.

Notes

  • Use room temperature cream cheese for a smooth, lump-free batter.
  • Do not overmix eggs to prevent cracking during baking.
  • Use a springform pan for easy cheesecake removal.
  • Ensure caramel sauce is thick to hold swirl pattern but pourable for easy drizzling.
  • Chilling the crust helps it hold better during assembly.
  • For best texture, bake until center is just set, it will firm up as it cools.
