Instructions
- Preheat and Prepare Pan: Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan or line it with parchment paper to prevent sticking.
- Make the Crust: In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted unsalted butter. Press this mixture firmly and evenly into the bottom of the prepared springform pan to form the crust.
- Chill Crust: Place the crust in the refrigerator to chill for 10 minutes so it firms up and holds together well during filling.
- Prepare Cheesecake Filling: In a large mixing bowl, beat softened cream cheese until smooth and fluffy. Gradually add 1 cup sugar and vanilla extract, mixing well until combined.
- Add Eggs: Add the eggs one at a time, beating on low speed after each addition just until incorporated, to avoid overmixing and adding air.
- Assemble Cheesecake: Pour half of the cream cheese mixture over the chilled crust. Drizzle half of the caramel sauce across the batter in lines. Carefully top with the remaining cream cheese mixture.
- Swirl Caramel: Using a knife, gently swirl the caramel into the cheesecake batter with figure-eight motions to create a marbled effect.
- Bake: Bake in the preheated oven for 55–60 minutes, until the edges are slightly golden and the center is just set but still slightly jiggly.
- Cool and Refrigerate: Allow the cheesecake to cool to room temperature on a wire rack. Then refrigerate for at least 4 hours or overnight to fully set and develop flavor before serving.
